Hungarian Dumplings

Here's the meat of the matter, the recipe page. The following are mostly from the oral recall of my mother and her sisters...in a few rare cases they were written down. Their mother, my Grandmother Waltz, was their teacher. I don't have much to offer by way of quantity at this time, but I will be expanding.

I have been taken to task by some visitors who have questioned the authenticity of these recipes; i.e. "a true Hungarian wouldn't even think of putting tomatoes in stuffed cabbage". I make no claims about being a purist...these recipes are authentic in that they were the ones handed down within my Hungarian family. Yes, they may have been altered along their happy journey to accommodate family tastes and preferences. To my critics I say, so much the better!

You may find my recipe style wordy and, at times, overly directive. It's just that I wish to provide you with as much background, guidance, and variation as possible. This site is also about memories and feelings as much as it is about technique, so I'm afraid you'll have to put up with the occasional rhetoric.

Enjoy!
